DROP SCONES
1 and 3/4 cup self-rising flour
2 and 1/2 tablespoons sugar
1 teaspoon cream of tartar
2 eggs
1 cup milk
Sift together flour, sugar, and cream of tartar. In another bowl, whisk together eggs and milk. Pour into flour mixture and combine quickly, making a thick batter.
Oil and preheat a griddle over medium heat. Drop heaping tablespoons of batter on the hot griddle. Cook until batter bubbles completely.
Place on a wire rack and keep warm until all scones are done. Serve warm with fresh fruit, honey butter, fruit curd, marmalade, or preserves.
