Victoria Sponge 101

I've always wanted to make one, and today I finally did ~ my very first Victoria Sandwich. I used Delia Smith's recipe and it turned out quite well. Next time I will use less buttercream (or perhaps splurge with whipped Double Devon Cream) and jam, but Tall and Handsome had no complaints, so it must have been okay! Here's a brilliant 8-minute video with step-by-step instructions. This version is by-hand, but as you can see in my photographs above, I used a Kitchen-Aid mixer.
Two new 7-inch cake tins: $9.
Fresh eggs, butter, sugar, and flour: $5.
Slice of homemade Victoria Sponge and a cup of tea: Priceless.
