Book of the Week: "Taking Tea at The Savoy"

One morning years ago, watching the Martha Stewart show, I caught an Afternoon Tea segment with then-Savoy chef Anton Edelmann. I was immediately fond of the German-born Chef Edelmann. He seemed to be very down-to-earth and I remember him saying to the American audience that if any of us were to visit The Savoy for Afternoon Tea wearing a hat, that he would come out of the kitchen with a personal greeting!

I have been many places in London for Afternoon Tea but, unfortunately, have yet to take tea at The Savoy - the place where Noel Coward performed, Caruso sang, and Pavlova danced. And it appears that it will be awhile before I will be able to take tea there as The Savoy closed for a £100 million restoration on December 15, 2007 for 16 months.

While you are waiting for the new and improved Savoy, why not add Chef Edelmann's "Taking Tea at The Savoy" to your tea book collection? It's a stylish book filled to the brim with incredible recipes used at teatime at The Savoy.

Here's Chef's unique take on the classic cream cheese and pineapple tea sandwich:

Cottage Cheese and Pineapple Sandwiches

2/3 cup cottage cheese
1 cup pineapple, finely diced
4 slices brown bread, buttered
Freshly ground pepper

Mix together the cottage cheese and pineapple, then season with pepper. Make into 2 sandwiches with the bread. Cut off the crusts and cut each sandwich into 3 equal fingers.
